These were going to be called Lemon Chia Balls but these flavourful morsels are packed full of lemony goodness so they are more like bombs. Whatever you want to call them, one thing is for sure – they can be called delicious!
Lemon Chia Bombs
Makes 20 balls
2 cups (260g) almonds
2 cups (140g) pitted dates
3/4 cup (65g) oats
3 tbsp lemon juice
Rind from 2 organic lemons
1 tbsp coconut oil
Chia seeds to roll
Chuck all the ingredients into a high powered food processor and blitz until sticky.
If your food processor isn’t that crash hot, then start with the almonds and blitz them until a fine crumb and then all all the other ingredients.
Roll into balls and then roll in the chia seeds.
Keep them in the fridge for up to two weeks in an air tight container.
