Braised Cabbage

On our recent trip to Prague, we had some amazing food. A traditional side dish they serve is braised cabbage and it’s delicious. I tried to recreate it using a red cabbage instead and it turned out great. So great that the kids will even be getting around it.
Braised Cabbage
Serves 4
Ingredients:
1 large red cabbage, roughly chopped
3 onions, finely sliced
1 tsp fennel seeds
1 tsp caraway seeds
2 red apples, roughly chopped
200ml balsamic vinegar
1 tbsp butter
3 rashers of smoked bacon
Sesame seeds to serve
Method:
Melt butter in a deep saucepan and add the onion and bacon.
Sauté for about 5 minutes until slightly golden and then add the cabbage, apples and seeds and sauté for a further 5 minutes.
Add the balsamic vinegar and cover and cook for about 45 minutes.
Garnish with sesame seeds.
