Raw Cookie Dough Slice

I am absolutely loving me some raw slices at the moment. They are just so easy. The perfect dessert for the time poor. This recipe will only work if you have a good food processor though – something with lots of power. I used my Thermomix but a normal food processor will work wonderfully.

Raw Cookie Dough Slice

Makes 24

1 cup (150g) almonds
1 cup (120g) oats
½ cup (40g) cacao powder
200g pitted dates
4tbsp rice malt syrup

Cookie Dough Layer
2 cups soaked cashews (for at least 3 hours)
½ cup (120ml) coconut oil
1 tsp vanilla extract
½ tsp cinnamon
100g dark chocolate chips (75% cacao or higher preferably)



Blitz all Base ingredients in a food processor on high until it forms a sticky crumb.

Place in a brownie tin lined with baking paper.

Press the base layer down firmly and evenly, all the way to the edges.

Put in the fridge while you’re preparing the next layer.

Wash food processor.

Place all Cookie Dough Layer ingredients (except for the choc chips) in the food processor and blitz on high until relatively smooth. You may need to keep stopping to scrape down the sides of the processor bowl.

Fold in the choc chips and spread onto the base.

Return to the fridge for at least 3 hours.

Using the baking paper, lift it out and cut into desired size squares.
