I came up with this recipe when a friend here in Grenoble asked me to develop a recipe for a cookie that she could enjoy with tea. Although they ended up not being cookies, these coconut bombs are the perfect accompaniment to a cuppa.
1 ½ cups (150g) desiccated coconut
5 egg whites
1 tsp vanilla essence
½ tbsp honey
Preheat the oven to 180°C and line a baking tray with baking paper or a reusable silicone baking mat.
Mix all ingredients in a bowl.
Roll the mixture into balls and place on the baking tray.
Bake for 15 minutes.
Allow to cool before taking them off the baking tray.
