Chai Latte

My friend Nargis from Healthy Bods by Nargis made me a homemade Chai Latte when I was visiting her in Bayonne last year and I was so super impressed that I decided to try to do it myself. I hope I have done her efforts justice.

CHAI LATTE

Makes about 2.5L

Ingredients: 
7 cinnamon sticks
8 cardamom pods
10 whole cloves
2 inch piece of ginger (cut into chunks)
5 juniper berries (optional, or can replace it with black pepper corns)
2 star anise
3 L water
1 english breakfast tea bag
honey (to taste)
frothed milk

Method:
In a large saucepan, place the cinnamon, cardamom, cloves, juniper berries and star anise and set to a low heat for about 1 minute. This makes the spices more aromatic, but be careful not to burn them.
Add the water, ginger and tea bag and increase the heat to medium and allow to simmer for at least 30 minutes.

If you want to make a stronger concentrate, then simmer it for an hour.

Pour chai mixture in a mug up to 3/4 full and then add honey to taste and top with frothed milk.
You can store the rest of the mixture in the fridge for up to 1 month.

Allow the mixture to cool before putting it into glass bottles.
