Lemon Tart

What to do when life gives you lemons?? Make lemon tart….or lemonade. But in this case I made Lemon Tart and it was delish!! You’ll need about 4 or 5 lemons for this recipe. Organic is preferable as you will be using the zest!

This recipe can also be dairy free if you swap the butter for coconut oil and the cream for coconut milk. I have used coconut milk instead of cream and it works perfectly!

LEMON TART 

Ingredients:

Crust:
75g oats
2 cups (200g) almond meal
1 cup (120g) tapioca flour
1/4 cup butter (room temperature) or coconut oil should work although I haven’t tried it yet
2 eggs
2 tbsp honey
1 tsp vanilla extract

Filling:
200ml freshly squeezed lemon juice (about 4 or 5 lemons)
zest from 2 lemons
120ml cream or coconut milk
50ml honey
4 eggs

Method:
Preheat the oven to 180°C.

Using a small knob of butter, grease the bottom of a pie dish ensuring you go all the way up the edges and in the crevices.

Place all the base ingredients into a food processor and blitz until it forms a slightly sticky crumb. If the mixture comes out too sticky (your eggs might be massive or you were over generous with the butter or honey) then add a little but more oats and tapioca flour until it doesn’t stick to your fingers anymore.

Press the base mixture into the pie dish and up the sides and bake for 5 mins.

Prepare the filling by placing all the filling ingredients into a blender or clean food processor for about 10 seconds.

Pour the filling mixture over the base and pop it back in the oven for 20 mins.

Allow to cool completely to room temperature before serving. Cover and keep in the fridge for up to a week.

Thermomix Instructions: 

Preheat the oven to 180°C.

Using a small knob of butter, grease the bottom of a pie dish ensuring you go all the way up the edges and in the crevices.

Place all the base ingredients into the Thermomix bowl blitz 10 secs/speed 5 until it forms a slightly sticky crumb. Scrape down the side of the bowl with the spatula and mix again 5 secs/speed 5.

Press the base mixture into the pie dish and up the sides and bake for 5 mins.

Wash out the Thermomix bowl by putting hot tap water and some dish washing liquid into the bowl and mixing for 10 secs/speed 10. If there is still residue, clean thoroughly with hot soapy water and a brush.

Prepare the filling by placing all the filling ingredients into the Thermomix bowl and blend for 10 secs/speed 6.

Pour the filling mixture over the base and pop it back in the oven for 20 mins.

Allow to cool completely to room temperature before serving. Cover and keep in the fridge for up to a week.
