Pumpkin Crumble Slice

I’m absolutely loving the fact that it’s pumpkin season and so I’m getting creative with spiced pumpkin flavours. I’ve made this delicious Pumpkin Crumble Slice to enjoy with tea this afternoon whilst watching the Wallabies final! Hope no trick or treaters interrupt the game…they won’t be getting any of this slice that’s for sure. Not sharing.

Pumpkin Crumble Slice

Ingredients:
Crumble:
3 cups (300g) oats

1 cup heaped (160g) almond meal
1 tsp bicarb soda
½ cup (125ml) melted coconut oil or butter
1/3 cup (100g) honey
60g coconut sugar

Pumpkin Filling:
500g roasted or steamed pumpkin
1 egg
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
1/2 tsp ground ginger
1 tsp vanilla extract

 

 

Instructions:

Preheat oven to 180°C.

Line a brownie baking dish with baking paper.

I used a 22cm x 27cm baking tin.

Place all crumble ingredients into a bowl and mix well until it forms a sticky crumble.

Place half of the mixture in the baking dish and press down evenly with your hands. Keep the other half of the crumble mixture aside.

Place the baking dish in the oven for 10 mins.

In a separate bowl, place all the pumpking filling ingredients into a bowl and mix well until a smooth paste. You can also use a food processor if you have one.

Pour all the pumpkin filling over the base and spread evenly using a spatula and put back in the oven for 10 mins.

Remove form the oven and sprinkle the remaining crumble mixture evenly over the top of the pumpkin mixture and return to the oven for 20 mins.

Remove from the oven and allow to cool in the tray for 15 mins before using the baking paper to gently remove the slice and cutting it into squares.

 

Thermomix Instructions:

Preheat oven to 180°C.

Line a brownie baking dish with baking paper.

Place all the crumble ingredients into the Thermomix bowl and blitz for 6 secs/speed 6.

Place half of the mixture in the baking dish and press down evenly with your hands. Keep the other half of the crumble mixture in a separate bowl.

Place the baking dish in the oven for 10 mins.

Rinse the Thermomix.

Place all the filling ingredients into the Thermomix bowl and blitz for 4 secs/speed 6. Scrape down the side of the mixing bowl with the spatula and blitz again 4 secs/speed 6.

Pour all the pumpkin filling over the base and spread evenly using the spatula and put back in the oven for 10 mins.

Sprinkle the remaining crumble mixture evenly over the top of the pumpkin mixture and return to the oven for 20 mins.

Remove from the oven and allow to cool in the tray for 15 mins before using the baking paper to gently remove the slice and cutting it into squares.
