Turkey Satay Skewers

This recipe would work just as great with chicken, but it had been a while since I’d had turkey and the turkey at the butchers just looked too good.

Turkey Satay Skewers

Serves 2/makes 4 skewers

Ingredients:
600g turkey breast
salt and pepper to season
½ tbsp olive oil

For the Satay Sauce:
½ a large onion or two small onions
2 cloves garlic
1 tbsp olive oil
½ (140g) cup crunchy peanut butter (make sure the ingredients is 100% peanuts)
1 tbsp coconut aminos (or ½ tbsp soy sauce)
1 cup (200ml) coconut milk

 

Method:

Cut the turkey into large chunks and push the meat onto the skewers. Season with salt and pepper.

Heat the olive oil in a large fry pan or grill. Ensure theres enough space for the whole skewer to be inside the pan and the meat in contact with the pan.

Cook the skewers on the pan until meat is cooked through and golden brown on the outside.

Meanwhile, finely chop the onions and garlic and place in a saucepan.

Sauté the onions and garlic in the olive oil on a low heat for 5 mins or until slightly transparent.

Add all of the other ingredients and reduce the heat to the minimum stirring continuously for 5-7 mins or until thick.

Serve over the skewers or as a dipping sauce on the side.

Thermomix Instructions:

Cut the turkey into large chunks and push the meat onto the skewers. Season with salt and pepper.

Heat the olive oil in a large fry pan or grill. Ensure theres enough space for the whole skewer to be inside the pan and the meat in contact with the pan.

Cook the skewers on the pan until meat is cooked through and golden brown on the outside.

Meanwhile, place onion and garlic in the Thermomix mixing bowl and blitz for 5 sec/speed 5. Scrape down the side of the bowl with the spatula and do this again if needed.

Add the olive oil and cook for 3 min/120°C/speed 2.

Add remaining ingredients and cook for 6 min/120°C/speed 2.

Serve over the skewers or as a dipping sauce on the side.
