Zucchini Slice

I’m currently testing out some new recipes for snack foods for my husband and my family for while they are waiting for me in the hospital come delivery day. I don’t want them to go hungry, so (I plan) on Peter taking an eski full of snacks so that he doesn’t have to leave. He’s much better at French than I am, and giving birth for the first time in a French hospital when not all midwives speak English is just another reason I don’t want him to leave my side.

So…..this one was a winner (after a previous failed attempt) and so I’ll make a batch and freeze them so they’re ready for the big day. I have also added the Thermomix instructions too. Happy baking.

Zucchini Slice 

Makes 12 squares

Ingredients:
1 (200g) zucchini
200g bacon pieces
2 cloves garlic
3 (160g) large spring onions
4 eggs
40ml cream
60g tapioca flour
30g blanched almond meal
1 tsp bicarb soda
1 tsp lemon juice

Method: 

Preheat oven to 170°C and line a baking tray with baking paper.

Grate zucchini and place in a large bowl. Finely dice onions and garlic and add it to the bowl (or alternatively you can process these 3 ingredients in a food processor until finely chopped).

Add all other ingredients leaving the bicarb soda until last and mix very well.

Pour into the prepared tray and bake for 45 mins. The top should be golden brown and when poked with a skewer, it should come out clean.

Thermomix Instructions: 

Preheat oven to 170°C and line a baking tray with baking paper.

Place zucchini, garlic and spring onion in the mixing bowl and chop 6 secs/speed 4.

Add the eggs, bacon, cream, tapioca flour, almond meal, cream, bicarb soda and lemon and mix for 8 secs/speed 3.

Pour into the prepared tray and bake for 45 mins. The top should be golden brown and when poked with a skewer, it should come out clean.
