Strawberry Muffins

Strawberry Muffins

One little hint for when you are shopping for the strawberries for this recipe is to smell the punnet before you buy them. You are looking for strawberries that are ridiculously sweet and smell like sugar. The stronger and sweeter the better for this recipe.

STRAWBERRY MUFFINS    (Now also with Thermomix method)

Makes 9

Ingredients:
80g butter or coconut oil, melted
100ml honey
2 eggs
1 tsp vanilla
1 cup (120g) tapioca flour
¼ cup (30g) coconut flour
1 tsp baking powder
1 pinch sea salt
1 cup (200-250g) chopped strawberries

Method:

Preheat oven to 170°C.

Place cupcake liners in muffin tray.

In a large bowl, place melted butter/oil, honey, eggs and vanilla and whisk for 3 mins until smooth and creamy.

Add all other ingredients except for strawberries and mix well with a wooden spoon until thoroughly combined.

Fold in the strawberries.

Pour mixture into patty pans evenly (ensuring each muffin has some strawberries) and bake for 30 mins, or until the tops are golden and a skewer comes out clean.

Remove from the oven and allow to cool before transferring them onto a wire rack to cool completely.

These muffins are best enjoyed 30 mins after you get them out of the oven. You’ll find they are are still a bit “runny” due to the moisture in the strawberries when they first come out the oven. Learnt that the hard way. I have no patience.


Thermomix Instructions:

Preheat oven to 170°C.

Place patty pans in muffin tray.

In your TM mixing bowl, place butter/oil and melt (if not already) 2min/80°C/speed 2.

Add the honey, eggs and vanilla and mix 20sec/speed 5.

Add all other ingredients except for strawberries and mix 20 secs/speed 6. Scrape the side of the bowl with the spatula and mix again 20 secs/speed 6.

Add the strawberries and mix 5 sec/speed 1.

Pour mixture into patty pans evenly (ensuring each muffin has some strawberries) and bake for 30 mins, or until the tops are golden and a skewer comes out clean.
