Just because you have cut out sugar and processed food from your diet doesn’t mean you have to miss out! Try these super easy Paleo Chocolate Truffles – they are sure to impress.
Paleo Chocolate Truffles
1 1/2 cups almond meal
1/2 cup cacao powder
1/4 cup almond butter
1/4 cup rice malt syrup
1/4 cup coconut oil, melted
1 vanilla pod, scrapings
100g dark chocolate (70% cacao or higher)
In a bowl, place all ingredients except for the dark chocolate.
Mix well to form a dough.
Line a tray with baking paper to place your truffles on.
Roll all the mixture into small balls using your hands and place on tray.
In a double boiler or microwave save bowl, melt the chocolate.
Dip each chocolate ball completely into chocolate and then return to the baking paper.
Refrigerate for 2 hours until the chocolate has set hard.
