Strawberry Cheesecake Slice

Both Peter and I are massive cheesecake fans but a traditional cheesecake is packed full of sugar and isn’t very nutritious. So I have been experimenting with using soaked nuts and here is my latest victory.
STRAWBERRY CHEESECAKE SLICE
Serves 6
Ingredients:
For the Base:
10 dates
2 tsp cinnamon
1 1/3 cup almonds
1/3 cup desiccated coconut
For the “Cheesecake”:
250g raw cashew nuts soaked overnight in water (or for at least 3 hours)
1 1/2 tbsp lemon juice
1 vanilla pod, scrapings
2 tbsp honey
1/2 cup coconut oil, melted
2 heaped cups of fresh strawberries (slice about half of them for decoration, leave the other half whole)
Method:
You may need to stop the blender a few times to mix with a spoon
Blend almonds until they form a crumb, add the dates, cinnamon and coconut and blend until it forms a sticky crumb.
Press the base mixture into a glass baking dish and refrigerate while preparing the cheesecake layer.

In a clean blender, place drained cashews, lemon juice, vanilla, 1 cup of the fresh whole strawberries and honey and blend until smooth.
Slowly pour in the coconut oil in small amounts and blend well after each addition until it’s all incorporated.
Pour cheesecake mixture onto the base mixture.
Use the other cup of sliced strawberries to decorate the top.
Cover with aluminium foil and freeze the slice for at least 3 hours.
Slice into portions and serve.
