I love guacamole and I still have never found a better recipe than mine which is by far the simplest but also the tastiest. I make this quite regularly as avocado is packed full of good fats, vitamin K, folate, vitamin C, potassium, vitamin B5, B6 and vitamin E. No wonder they call avo a “superfood”.
3 ripe avocados, mashed
2 tbsp red onion, very finely chopped
1/4 cup red capsicum, very finely chopped
Celtic or Himalayan Sea and pepper to taste
Fresh chili or chili flakes to taste (optional)
Mix all ingredients with a fork and season.
Serve with carrot cut into “chips”.
