Sweet Banana Omelette

Sweet Banana Omelette

This is one of my favourite breakfast recipes EVER! My brother originally introduced me to this concept of putting banana in an omelette and I know it sounds weird (just banana and eggs) but trust me – this will rock your world.


Serves 1

2 eggs
1 banana
1 tsp coconut oil
1 tsp cinnamon
1/3 cup greek yoghurt or coconut yoghurt
1/2 cup fresh or frozen berries


Heat coconut oil in a fry pan on a low heat.

In a bowl, whisk the eggs with a fork and slice the banana into the egg mixture.

When the pan is hot, add the egg and banana mixture, ensuring that the banana is spaced out evenly.

Sprinkle the cinnamon over the omelette and put a lid on the fry pan.

Cook for 5 mins on medium-low heat.

Once cooked, the omelette should have risen and the egg should be cooked through.

Using a spatula flip the omelette in half so it’s folded over.

You can use any other garnishing you like: bee pollen, nuts, seeds, honey, coconut flakes etc

Place on a plate and serve with yoghurt and berries (If using frozen berries, make sure you heat them up first).

    Tried this today – even without the yoghurt (didn’t have any in!) it was delicious. Had to cook it with a knob of butter as I don’t have coconut oil and have no idea where I might find it here. Not available in local Carrefour or Intermarche!!

      So glad you liked it. You can get coconut oil from health food shops around Grenoble like L’Eau Vive. Many of the ingredients I use are available at these stores. 🙂
